Easy, protein-packed muffins to start your day! Two muffins contain about 7 grams of protein and are made with whole grain flour thanks to Kodiak Cakes mix!

Ingredients

  • 2 cups Kodiak Cakes waffle and flapjack mix

  • ½ cup brown sugar

  • ¾ cup of milk

  • 1-1 ½  cup chopped apples (leave skins on for extra fiber and less prep!)

  • ¼ cup melted butter (or substitute ½ cup plain Greek yogurt)

  • 1 egg

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

Directions

  • Preheat oven to 350 ℉
  • Combine all ingredients in a mixing bowl. Blend ingredients well, until smooth.
  • Fill muffin cups with liners or grease muffin cups using a nonstick cooking spray.
  • Fill each muffin cup ¾ full.
  • Bake for 16-18 minutes or until the tops are golden brown and the toothpick inserted comes out clean.
  • Refrigerate or freeze for later enjoyment.
